Like that time we thought we were gonna have our own place to drink sea view.

Then you know, alcohol makes you hungry: so you also needed something universally good. Like Pinsa.

In short, something that was both fresh and crisp. It was just a "Malidea".
So we decided to make it happen.

Our Pinsa dough rests for 48 hours minimum and it's hydrated by 85% of water.
The result is a product with a high digestibility, with a crunchy bottom and honeycombed structure.

We offer local and typical ingredients true to Apulian traditions, well known throughout Italy and worldwide.

The extra touch is the selection of creams and sauces thoughtfully created by us.

Our Pairings

Malidea has always worked in symbiosis with the two departments that compose it (bar and pinseria).

Driven by a great passion for their work, Antonio and Francesco propose their combinations of food and drinks, in an unconventional way.

Let yourself be carried away and, who knows, maybe you will discover that there are alternative ways of taste to pinsa & beer or cocktails & peanuts.

Below each combination you will find three adjectives: three words with which we try to convey our emotions during creation.

Mr. Wolf Time

A drink clearly inspired by the character of Quentin Tarantino’s 1994 film Pulp Fiction.

Laselva imagined the special coffee of Polignano a Mare, made with cream, amaretto and Lecce coffee with almond milk, impersonified by his Falernum. All with the bartender’s favorite gin as a base of the drink, the Seven Hills Italian Dry Gin, with its crumbling and spicy vegetable notes that bind with the notes of 100% Arabica coffee that gives off hints of bergamot, maple syrup and pandolce and a touch of vodka infused with the same coffee used for the drink and then for the moka.

A drink that releases in the glass the famous hospitality of Puglia, one of the key points of the Italian brand Seven Hills Gin.

O' Famo Strano?

The idea was to put Puglia and Polignano in the glass using either traditional taralli or those with onion, produced by a local bakery.

Everything has born from the suggestion of a customer and, after all, tarallo is typical of our land: tourists do not know it, and then they fall in love with it. There is another ingredient that makes it 'weird' and even more Pugliese: a tomato jam that we do right in house, which is also a laboratory.

Our values

Malidea’s heart beats for the sea and the environment.

We do not use plastic straws. If necessary, ask our staff for paper straws.

We only serve water in glass bottles.

All the other apparently plastic elements are made of compostable BIO material.

Most of the syrups and juices inside the cocktails are made in-house and we do not use energy drinks for mixing.

We love and welcome animals, especially UNICORNS.

The LGBTQ+ community is welcome.
